Stir fried rice noodles with red curry sauce makes a terrific side dish, or main meal. Red curry paste is a very potent and spicy ingredient, a little goes a long way to add a bit of spice to the noodle dish. This recipe makes 4 dinner size or 6 lunch size portions of Thai style noodles. This dish is a bit similar to a traditional Pad Thai noodle recipe.
Ingredients for Stir Fried Noodles with Red Curry Sauce
- 8 ounces wide rice noodles
- 1/3 cup vegetable oil
- 1 tablespoon red curry paste
- 2 cups Chinese or Napa cabbage - roughly chopped
- 1 tablespoon ponzu sauce
- 1 tablespoon fish sauce
- 1 tablespoon palm sugar
- 1 tablespoon lime juice
- 1/4 cup roasted peanuts - chopped
- 1/2 cup fresh basil leaves - roughly chopped
- 1/3 cup fresh mint leaves - roughly chopped
- 1 carrot - peeled and grated
Directions for Stir Fried Noodles with Red Curry Sauce
- Add the rice noodles to a large bowl, fill the bowl with water, and let soak for 40-60 minutes, or until they have begun to soften. While the noodles are soaking, prepare the ingredients for the rest of the recipe.
- In a small bowl, mix together the ponzu sauce, fish sauce, palm sugar and lime juice, then set the bowl aside.
- Heat the vegetable oil in a wok, placed over medium high heat.
- Add the red curry paste to the wok and stir into the hot oil.
- Add the cabbage to the wok, and cook for a minute or two, or until the cabbage begins to wilt.
- Drain the water from the rice noodles, then add the noodles to the wok.
- Stir in the sauce mixture of ponzu sauce, fish sauce, palm sugar and lime juice.
- Stir in the peanuts, basil and mint and cook for another minute or two.
- Turn the heat off, then pour the noodle mixture into a large serving platter or large bowl.
- Garnish the Thai style stir fried noodles with red curry sauce with the grated carrot.
- Serve immediately.
Recipe Tips and Suggestions
- Ponzu sauce is a citrus flavored soy sauce. Regular soy sauce can be substituted for the ponzu sauce.
- If a wok isn't available, use a large frying pan to make the Thai style noodles.
- Other fresh herbs, such as parsley and/or cilantro may be used in place of the basil and/or mint.
- Garnishes, such as lime wedges, slice green onions, or additional chopped peanuts, may be served along with the noodle dish.
- Light brown sugar can be substituted for the palm sugar.

The red curry paste used in this recipe contains shrimp paste, making it unsuitable for vegetarians. Try making a homemade version of red curry paste, and omit the shrimp paste, to make a curry paste that can be used by vegans and vegetarians.
Ready made red curry paste can be purchased from online specialty stores, such as Importfood.com and Temple of Thai. Homemade curry sauce contains many ingredients and takes time to prepare, as all the ingredients must be pounded to a fine paste using a mortar and pestle.
