Ingredients for Caramelized Pork with Crispy Shallots

  • 1/2 cup vegetable oil, such as peanut oil or canola oil
  • 6 Asian shallots - peeled and sliced thin
  • 1 pound lean pork - remove any excess fat, then cut the pork into small, thin strips
  • 6 cloves garlic - peeled and minced
  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon fish sauce
  • 1/4 cup palm sugar
  • 1/4 teaspoon ground white pepper

Directions for Caramelized Pork with Crispy Shallots

  1. Place the vegetable oil in the bottom of a wok, or heavy sauce pan.
  2. Heat the oil over medium heat and fry the shallots until golden brown.
  3. Remove the fried shallots to a paper towel lined plate.
  4. Remove all but 2 tablespoons of the oil from the wok or sauce pan.
  5. Add the garlic, and stir fry for a minute or two, until fragrant and golden brown.
  6. Add the pork to the pan and stir fry until no longer pink.
  7. In a small bowl, whisk together the oyster sauce, soy sauce, fish sauce, palm sugar and white pepper.
  8. Stir the sauce into the wok or sauce pan.
  9. Continue cooking the pork, until the liquid in the sauce has mostly evaporated and formed a thick, sticky caramel-like sauce.
  10. Place the caramelized pork onto a large serving platter and garnish with the crispy fried shallots.
  11. Serve immediately.
  12. Leftovers may be stored for a day or two, in the refrigerator, in an airtight container.

  • Shallots look a bit like a small, oblong, red onion. French shallots, which can be found at most grocery stores, may be substituted for Asian shallots.
