Sauteed cherry tomatoes make a wonderful side dish that can be enjoyed by everyone, including vegans and vegetarians. Serve the tomatoes with lots of crusty French or Italian bread, to soup up the wonderful pan juices.

Sauteed cherry tomatoes can be served as part of a complete meal which includes pasta, a green salad and garlic bread. Pan fried tomatoes with fresh herbs also taste great served on top of cooked chicken, fish or pork. This recipe creates 4 servings of sauteed tomatoes.

Ingredients for Sauteed Cherry Tomatoes

  • 2 pints (4 cups) cherry tomatoes
  • 1 tablespoon olive oil
  • 1-2 teaspoons sugar
  • 2 cloves garlic - minced
  • 2 tablespoons fresh herbs - choose from basil, oregano, marjoram
  • salt and pepper

Directions for Sauteed Cherry Tomatoes

  1. Place the olive oil in a large frying pan over medium high heat.
  2. Cut the tomatoes in half and add to the frying pan.
  3. Sprinkle the sugar on top of the tomatoes.
  4. Stir the tomatoes and cook for 1-2 minutes.
  5. Stir in the garlic and cook for another minute.
  6. Remove the tomatoes from the heat and stir in the fresh herbs.
  7. Season to taste with salt and freshly ground black pepper

Recipes Tips and Suggestions

1. If the cherry tomatoes are very sweet, reduce the amount of sugar that is used. Very acidic tomatoes will need the full 2 teaspoons of sugar added to the recipe.

2. A variety of red and yellow, cherry or grape size tomatoes can be used to create this recipe.

3. A Mediterranean version of the sauteed tomatoes can be made by adding 1 tablespoon of capers and 1/4 cup of sliced black olives to the recipe.

4. The sauteed cherry tomato recipe can also be used as a homemade tomato sauce which is served on top of pasta, rice or baked potatoes.

5. Don't overcook this side dish, or the skins will begin to wrinkle and will start to separate from the tomatoes.

6. Although fresh parsley can be used in this recipe, it is a rather mild tasting herb. The fresh tomato flavor of this recipe works better with a stronger tasting herb such as basil, oregano, thyme or marjoram.
