Use pumpkin pie filling, cinnamon, nutmeg and cloves to create a wonderful, cake-like breakfast treat. A complimentary recipe for honey butter is included.
Pumpkin spice muffins, use traditional pumpkin pie spices, such as cinnamon, nutmeg and cloves, as part of their ingredients. Pumpkin spice muffins, with their cake-like texture, are incredibly moist. Leftover pumpkin spice muffins can be lightly toasted, and served with a bit of softened honey butter. The instructions for creating honey butter are included in this article.
Pumpkin Spice Muffin Ingredients
- 1 3/4 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- 3/4 cup milk
- 4 tablespoons butter - melted
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1 cup canned pumpkin
Pumpkin Spice Muffin Directions
- Preheat the oven to 400 degrees.
- Spray a 24 compartment mini muffin tray with non-stick cooking spray.
- In a large bowl, sift together the flour, sugar, salt and baking powder.
- In a small bowl, whisk together the eggs, milk and melted butter.
- Add the liquid ingredients to the bowl of dry ingredients and stir until blended.
- Add the cinnamon, nutmeg, cloves and pumpkin to the muffin batter, and stir until blended.
- Fill each compartment of the muffin tray approximately 3/4 full with the pumpkin spice muffin batter.
- Place the muffin tray in the oven and bake for 20 to 25 minutes, until light brown on top.
- Remove the tray from the oven, and let sit for a few minutes before removing the muffins from the tray.
Recipe Tips and Suggestions
- Add 1/2 to 1 cup of chopped nuts, such as pecans or walnuts, to the pumpkin spice muffin batter.
- Add 1 teaspoon freshly grated orange rind to the pumpkin spice muffin batter.
- Add 1 teaspoon vanilla extract to the pumpkin spice muffin batter.
- 1/2 cup of well drained, canned, crushed pineapple can be added to the pumpkin spice muffin batter, if desired.
- Substitute margarine for the butter.
- Plain soy, almond or rice milk can be used in place of the milk if desired.
- Mashed yams, or sweet potatoes, can be used in place of the pumpkin, for a slight flavor variation.
- 2 1/2 teaspoons of allspice can be used in place of the cinnamon, nutmeg and cloves.
- Over stirring the batter can result in a dense and tough muffin. Don't be alarmed if their are a few lumps in the batter.
Honey Butter Recipe
Beat 1/4 cup of honey into 1/2 cup of room temperature butter. Serve along with homemade muffins, such as pumpkin spice muffins. A blender or hand mixer may be necessary, to completely incorporate the honey into the butter. Leftover honey butter can be stored in the refrigerator for up to one week.
