Learn how to make a light and fluffy pancake flavored with pumpkin pie filling and traditional pumpkin pie spices.
Pancakes, also known as flap jacks or hotcakes, are a traditional breakfast comfort food. There is nothing to compare to the taste and aroma of a plate full of freshly cooked pancakes, served with lots of creamy butter and sweet maple syrup.
Pumpkin pie pancakes are a delicious breakfast treat which can be served at a Sunday brunch celebration. Try making silver dollar sized pancakes, to serve as a finger food, at a tea party or bridal celebration.
This recipe makes between 15 and 18 pumpkin pie pancakes. The recipe makes a very thick batter.
Pumpkin Pie Pancake Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1 cup canned pumpkin
- 1/4 cup brown sugar - packed
- 1/2 teaspoon cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
Pumpkin Pie Pancake Directions
- Sift together the flour, baking powder, baking soda and salt into a large mixing bowl.
- In a smaller bowl, whisk together the vanilla extract, egg, milk, melted butter and pumpkin puree.
- Whisk the brown sugar, cloves, nutmeg and cinnamon into the liquid ingredients.
- Stir the liquid ingredients into the flour mixture until just blended.
- Place a large frying pan, or griddle, over medium heat.
- Spray the pan with non-stick cooking spray.
- Fill a 1/4 cup measuring cup with the batter, and pour onto the griddle.
- Cook for 2-3 minutes or until the pancake batter begins to form small bubbles in the middle and the edges begin to turn golden brown.
- Flip the pancakes, and cook for another 2-3 minutes, or until golden brown.
- Remove the cooked pancakes to a large platter until ready to serve.
- Continue cooking pancakes until all the batter has been used.
- Spray the griddle with additional non-stick cooking spray as needed.
Pumpkin Pie Pancake Recipe Tips
- The pancakes can be made 3-4 at a time, depending on the size griddle, or frying pan that is used.
- Serve the pancakes with a dollop of butter or margarine on top, and a generous amount of real maple syrup.
- Honey can be served along with the pancakes, instead of maple syrup, if desired.
- Stir in 1/2 cup chopped pecans into the pancake batter if desired.
