Learn how-to make a vegetable side dish featuring fresh brussels sprouts, garlic and lemon.

Brussels sprouts are a type of cruciferous vegetable and are members of the Brassica family. Other types of cruciferous vegetables include cabbage, collard greens, broccoli, cauliflower, kale and kolhrabi.

Vegetable Side Dish

Oven roasting Brussels sprouts creates a side dish with a pleasant, slightly caramelized flavor. Other methods of preparation, such as boiling or steaming, may result in Brussels sprouts with an unpleasant, bitter flavor.

Serve oven roasted Brussels sprouts along with whole wheat pasta, and stir fried, marinated tofu for a complete vegetarian meal, which is also suitable for vegans. This recipe for oven roasted Brussels sprouts makes 4 servings.

Oven Roasted Brussels Sprouts Ingredients

  • 1 pound fresh Brussels sprouts
  • 1/4 cup olive oil
  • 2-4 cloves garlic - minced
  • 1 lemon - seeds removed, sliced thin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon freshly ground black pepper

Oven Roasted Brussels Sprouts Directions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Wash the Brussels sprouts, cut off the ends, and remove any discolored, outer leaves.
  3. Cut smaller Brussels sprouts into halves and larger ones into quarters.
  4. Place the Brussels sprouts into a large bowl and toss them with the olive oil and minced garlic.
  5. Spread the Brussels sprouts onto a baking sheet and season with the salt and pepper.
  6. Tuck the lemon slices in between the Brussels sprouts.
  7. Bake for 40 minutes, or until the Brussels sprouts are cooked through, and begin to caramelize.

Recipe Tips and Suggestions

  1. Adjust the amount of garlic, salt and pepper used in this recipe, according to personal taste.
  2. For easy clean-up, line the baking sheet with a piece of aluminum foil or parchment paper.
  3. Don't over cook the Brussels sprouts. It is better to have a slightly crunchy vegetable, than an overcooked, and mushy vegetable.
  4. For a slightly spicy version of oven roasted Brussels sprouts, toss in a bit of red pepper flakes, or a few shakes of hot pepper sauce, before placing the Brussels sprouts in the oven.
  5. Additional seasonings that can be added to the Brussels sprouts, in addition to, or instead of the garlic and lemon, include fresh thyme, Parmesan cheese, thin sliced onion, or diced ham.
  6. Brussels sprouts look a bit like miniature cabbages. Purchase Brussels sprouts that are as fresh as possible. Choose bright green Brussels sprouts, with tightly packed leaves. If possible, purchase the desired quantity of individual Brussels sprouts, instead of prepacked Brussels sprouts.
