Vegetable side dishes don't have to be boring. Learn how-to make fresh green beans, steamed with chicken broth, garlic, sauteed shallots and garnished with almonds.

Use fresh green beans, that aren't too large, when creating this recipe. Check the local farmer's market or green market for tender, small to medium green beans. Older, larger beans will need to be cooked a bit longer, to make them tender.

This recipe makes 4-6 servings of green beans almandine. Leftover green beans can be stored in the refrigerator for up to one week. Simply reheat the beans, either in the microwave for a few minutes, or in a small pan set over medium heat.

Ingredients for Green Beans Almandine

  • 1 tablespoon olive oil
  • 1 shallot - chopped
  • 1 clove garlic - minced
  • 1 pound fresh green beans - ends trimmed off
  • 1/2 cup chicken broth
  • 1 teaspoon fresh thyme leaves
  • Salt (optional)
  • 1/4 teaspoon freshly cracked black pepper
  • 1/3 cup almonds

Directions for Green Beans Almandine

  1. Coarsely chop the almonds.
  2. Add the almonds to a dry frying pan, which is placed over medium heat.
  3. Continually stir the almonds, until they turn light brown.
  4. Remove the toasted almonds from the pan, and set aside.
  5. Add the olive oil to the frying pan.
  6. Stir in the shallot and cook for 3-5 minutes, or until they begin to turn golden.
  7. Stir in the garlic and cook for 1 more minute.
  8. Add the green beans, chicken broth and thyme.
  9. Add a bit of salt, if desired, and the black pepper.
  10. Turn the heat to high, and bring the mixture to a boil.
  11. Reduce the heat to low, and cover the frying pan with a lid.
  12. Simmer for 5 to 10 minutes, until the beans are tender, but still have a bit of crunch to them.
  13. Remove the lid and turn the heat up to medium high.
  14. Continue cooking the beans, until most of the liquid has been evaporated.
  15. Turn off the heat.
  16. Stir in the almonds.
  17. Place the green beans in a large serving platter.
  18. Serve immediately.

Recipe Tips and Suggestions

1. To make a vegetarian version of this dish, substitute vegetable broth for the chicken broth.

2. 1/4 cup finely chopped onion can be substituted for the shallot, if desired.

3. Other toasted nuts, such as pecans, walnuts or cashews, can be used in place of the almonds.

4. Sprinkle a bit of chopped, fresh chives on top of the green beans right before serving.
