Coleslaw is a classic side dish which is often served at backyard bar-be-cues and family picnics. Coleslaw also makes a terrific accompaniment to pulled pork, chili and other hearty meat dishes. The coleslaw may be made a few days ahead of time, with the dressing stored in a separate container to keep the vegetables from getting soggy. When it is time to serve, stir the dressing into the bowl full of shredded vegetables.
Creamy Coleslaw Recipe Ingredients
- 2 cups green cabbage - shredded
- 1 cup red cabbage - shredded
- 1 cup carrots - peeled and shredded
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 tablespoons granulated sugar
- 2 teaspoons caraway seeds
Creamy Coleslaw Recipe Directions
- Core the green and red cabbage, then cut them into wedges.
- Use a food processor to shred the cabbage wedges, then add the shredded cabbage to a large bowl.
- Shred the carrots in the food processor, then stir them into the bowl of shredded cabbage.
- In a small bowl, whisk together the mayonnaise, vinegar and sugar to make the coleslaw dressing.
- Continue whisking the coleslaw dressing until the granulated sugar is completely dissolved.
- Stir the caraway seeds into the bowl of coleslaw dressing.
- Stir the coleslaw dressing into the bowl of shredded cabbage and carrots.
- Refrigerate the coleslaw for at least one hour before serving.
- Leftover creamy coleslaw may be stored in an airtight container, in the refrigerator, for a few days.
- This recipe makes 4 cups of coleslaw.
Recipe Tips and Suggestions
- Any combination of red and/or green cabbage may be used to create this coleslaw recipe.
- Experiment with other varieties of vinegar, such as rice vinegar, or white wine vinegar, used in place of the apple cider vinegar.
- Substitute up to 1 cup of shredded broccoli stalks for some of the shredded cabbage.
- Sour cream, Greek yogurt, or a mixture of the two, may be used in place of some or all of the mayonnaise that is used in the coleslaw dressing.
- One tablespoon of honey may be used in place of the granulated sugar when making the creamy coleslaw dressing.
- Celery seeds may be used instead of, or in addition to the caraway seeds.
